Our sirloin comes from grass-fed herds raised on the pastures around Glasgow. The beef is dry-aged for 21 days, which deepens the flavour and relaxes the muscle so every steak cooks evenly.
Expect a rich, slightly sweet taste with a fine marbling that bastes the meat as it cooks. Season generously, sear in a hot pan for three minutes a side for medium-rare and rest for five minutes before slicing.
Keep refrigerated at 0-4 °C and cook within three days of delivery, or freeze on the day it arrives for up to six months.
